P5 – Mechanisms and Applications of PEF in the Food Industry
PEF, due to electroporation phenomenon, has been demonstrated as a useful tool in pasteurization, extraction, dehydration, structure modification and other processes. In some of them it has been already commercialized and industrialised. This session will serve as a unique platform to exchange knowledge and experience related to fundamental and applied aspects of PEF utilization in food processing.
