This article collection (Research Topic) will provide insight to the current state of knowledge, new developments in and applications of pulsed electrical fields across industrial scale biotechnological processes. Pulsed Electric Fields in Industrial Biotechnology – Proceedings of the 4th World Congress on Electroporation, will feature in the Industrial Biotechnology section of the journal (Specialty Chief Editor – Dr Georg Guebitz). We are delighted to welcome Dr Nabil Grimi and Dr Mark Jaroszeski as Guest Editors for this collection.

Frontiers in Food Science and Technology is a new journal by Frontiers at the helm of which, in capacity of the Field Chief Editor, is Prof. Giovanna Ferrari. This article collection (research topic) will represent a small, yet significant compendium of the latest achievements and advances in the field of PEF applications relevant to the food industry. It will feature original research papers that will follow from the presentations at the World Congress, as well as general solicited and unsolicited papers, and will be edited by topic editors Javier Raso, Federico Gomez Galindo, and Samo Mahnič-Kalamiza.
