Frontiers in Food Science and Technology is a new journal by Frontiers at the helm of which, in capacity of the Field Chief Editor, is Prof. Giovanna Ferrari. This article collection (research topic) will represent a small, yet significant compendium of the latest achievements and advances in the field of PEF applications relevant to the food industry. It will feature original research papers that will follow from the presentations at the World Congress, as well as general solicited and unsolicited papers, and will be edited by topic editors Javier Raso, Federico Gomez Galindo, and Samo Mahnič-Kalamiza.
